This got me thinking back to the food markets I’ve been to around the world and I realize that each of these places all end up being one of the most memorable visits in their respective countries. I’m a little disappointed that none of my favorites are listed in the top 10, but this just means I have some more traveling to do! See below for some of my travel photos.

In order to really understand a culture and experience someone else’s city, travelers need to EAT, FEEL, and DO, not just look and see.

3,347 Miles

3,347 miles to the next adventure! PV and I will be road-tripping across America. Take a look at our route and the sites we plan on stopping by. It’s not 100% confirmed, but this is very close to what we will be doing.

 

I love Virginia, but I cannot wait to explore the other 49! Has anyone driven across America before? Any advice for this noob?

I love Virginia.

I love Virginia. I have family here and friends here; history here and roots here.

But I also know deep in my heart that I am ready and in need of a change; that there exists an opportunity for me elsewhere that I will not find here, nor replace here.

His story is now mine. The only differences? His original family is from Puerto Rico, mine from Thailand; his parents moved to Virginia from Long Island, mine from Chicago; he’s moving to Austin and.. me? Well, read here!

Onward to the next adventure!

Introverts

I first heard about Susan Cain on NPR a couple months ago and loved her analysis of introverts. Here’s the link to the podcast: Quiet, Please: Unleashing ‘The Power of Introverts’

Her TED talk on the topic of introverts resonates deeply with me because I remember feeling incredibly guilty of being introverted in school. It was not enough that I could get good grades and have great ideas on paper, but one had to be able to vocalize those ideas and participate in group work. At one point, 5% of our English IB grades were based on participation alone, putting me at a great disadvantage. I recall several occasions where a more extroverted student would voice the same opinion that I had, but would always get it out before me. More guilt ensued. Of course that was a long time ago, and I have since grown a great deal due largely to my professional experience. Although I still consider myself an introvert, I realize I’m not as far down that side of the spectrum as I used to be. Some of my friends are even surprised that I score as an “I” in the Myers-Briggs Type Indicator Assessment.

Socially, introverts are no better or worse than extroverts. As a society, we need to be able to adapt to and provide a nurturing environment to both personality types.

Many people believe that introversion is about being antisocial, and that’s really a misperception. Because actually it’s just that introverts are differently social. So they would prefer to have a glass of wine with a close friend as opposed to going to a loud party full of strangers.

The lesson here? Wherever you  may lie on the introvert-extrovert spectrum, never feel guilty of who you are. Rather, embrace it, own it, and allow others to respect it.

[Meatless Monday] Vegetarian Chili with Quinoa

It’s Meatless Monday! Here’s a great chili recipe from ONE Medical Group. I tried it out last week and, trust me, it makes way more than 4 servings.

INGREDIENTS:

  • 2 cups tomato juice, divided
  • 1 cup quinoa, uncooked
  • 3 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 large celery stalks, chopped
  • 1 small green bell pepper, chopped
  • 2 large carrots (or 3-4 medium carrots), cut in 1/4in rounds
  • 15oz can black beans, rinsed and drained
  • 15oz can kidney beans, rinsed and drained
  • 28oz can crushed tomatoes
  • 1/2 cup red wine
  • 1 jalapeño, diced
  • 1tbsp chili powder
  • 1 1/2 tsp cumin
  • 1 tsp dried oregano
  • 1 tsp kosher  or sea salt

Optional garnishes: chopped green onion, diced avocado, shredded cheese

I got ALL of my ingredients from MOMs Organic Market in Alexandria, VA. They even gave me a free shopping bag, I love it.

DIRECTIONS:

1. Boil 1 cup tomato juice, pour over quinoa, and let stand for at least 15minutes.

 2. Heat the olive oil in a large saucepan (I used my French oven!) over moderate heat. Add the onion and garlic and sauté until the onion is soft but not brown, about 4 minutes. Add the celery, bell pepper, carrots, and jalapeño pepper. Cook until vegetables begin to soften, about 4 minutes.
3. Add the chili powder, cumin, oregano, and salt. Stir well to combine with the vegetables and cook 1 minute. Add the black beans, kidney beans, crushed tomatoes, remaining cup of tomato juice, red wine, and the quinoa.

4. Bring to a boil, lower the heat and simmer, covered, for 30 minutes.
Enjoy with shredded cheese, green onions, or chopped avocado!
This is a great high-fiber, high-protein meal making it especially beneficial for consumption post-workout. Enjoy!
